Crockpot roasted chicken
We usually eat this for one night, then shred the rest and put it on salads for lunch. Costco sells organic birds in a 2-pack. You can make a double batch of the veggie sautee/broth combo and freeze half of it in a baggie. Then when you go to make the second bird, you just thaw the sauteed veggies and dump 'em in the crock.
Paleo Pad Thai
This is deeelish, and if you aren't omitting peanuts, it's even better with some crushed on top. I use this to make the "noodles". But I suspect sliced squash would be just as good.

Also, the Axelson family is adhering to a strict 3 days on, 1 day off workout schedule. No fiddling. No adjusting, no rescheduling, no complaining, no bargaining (ie) working out an extra day so you can take two off in a row b/c it will be easier on the schedule. So far we've done 3 rounds of 3:1 and we are really liking the balance/schedule.
